Breakfast: Yes or No?

As an adult, I’ll admit that my eating habits are not something I’d recommend that other people use as “model behavior”.  Other than the dinners I cook for my family on most weeknights, you’re just as likely to find me standing at the sink, blankly staring out of the kitchen window as I scarf down some leftover from the refrigerator that didn’t stink or walk out of the crisper on its own.

Over the years, I have to admit that breakfast has just never been part of my routine.  I’m more of a “two meal a day” guy (lunch and dinner), but who am I kidding – I say two meals and then you’ll find me on the couch at 9:30 PM stuffing half a bag of chips down my gullet as I binge watch “Stranger Things” on Netflix.

Maybe that’s why I’m about twenty pounds overweight? Hmmmmmm…..

But I digress.

Not counting coffee (which I view more as a morning requirement – not a meal), I rarely partake in a regular breakfast.  Oh, there’s the occasional weekend splurge (and for some reason I always seem to eat one when on vacation), but other than that I’d say I partake in a morning repast about as often as I change the batteries in my smoke alarms – which is to say, rarely.

It’s a shame really.  The breakfast world has a wide array of foods that I enjoy.

Bagels and cream cheese, toast, English muffins, granola, yogurt, home fries, chip beef gravy, grits – the list goes on and on.

One of my morning favorites (when I do indulge) is eggs.  Any style, from scrambled to soft-boiled, omelets to fried – you just can’t go wrong with eggs in the morning.  My personal favorite?  Over easy – just enough so that the yolks are still runny and I can dip my toast or muffin in there to soak up all of that gooey, yellow goodness.  We used to call them “dippy eggs” when I was a kid.  Ahhhh, memories.

Did I mention bacon?

Man, I looooooovvvvvvveeeee me some bacon.  Crisp, flat bacon.  If I am on vacation and there’s a breakfast buffet with a giant steam table tray of bacon, there’s trouble ahead.  I’ll punch a baby and swear at a priest to get a wheelbarrow load of fried pork on my plate, then head back for seconds – and maybe thirds.  Look out Mr. Cholesterol, looks like it’s gonna be a two “Lipitor” morning.

It appears that I need to either start eating breakfast more or adding its components to my menu planning as a “breakfast for dinner” night.  Good thing I have a big package of thick-cut bacon in my fridge at the ready.  The local toddlers and clergy are safe for now.

  1. I like breakfast casseroles many of which you can make the night before and pop in the fridge. Next morning while you are enjoying your coffee you pop it in the oven and in 30 minutes or so……breakfast is served. Cooks.com has all kinds of recipes. If made in large quantities some of these recipes can be cut into portions and then reheated (nuked) for a quick breakfast on those workday mornings.
